Chicken thighs are the shiiiiiiiiiit.

I make a gumbo-type-thing that uses the bone in thigh, shrimp, crawfish and whatever other seafood I find on sale/have around.

Rightly so, they're practically magic. Roast them with salt and pepper, add them whole to any soup/stew/mix of veggies in broth, and they create massive body and a better feeling of fullness. The magic of animal fat.

Personally, I feel like recipes are fine but in the future, someone might choose to make that part of their challenge. Does anyone else feel one way or the other about recipes?

I think recipes are fine. I'm making a french lentil dish that I certainly got from a recipe at one point. Eventually, I made it my own. That's how recipes work in our home, they're more of a "guiding post" than a strict thing to adhere to. That is, unless you are baking. That shit's a science.
