Once you make TLOTR, you can pretty much walk around set in a dress if you like. I'm glad he gained back a little bit of weight. The ultra skinny Peter Jackson was unnerving. I bet his relaxed demeanor really maintains a good vibe on set. I saw an interview with Kirsten Dunst recently where she talked about Lars Von Trier getting naked on set and running around just to get create the kind of vibe he was hoping to capture on film. I'll take a shaggy PJ anytime.
Considering 3D. I totally agree. I haven't gone to see a 3D film (outside of DisneyWorld) in a standard theatre precisely because of what you're talking about. Still too much of a novelty. Actors and things moving ONLY because of how it projects out of the screen. I seem to recall (and it might have been on a Hobbit video blog) someone talking about how they're very considerate of this and how they just want natural depth. Still, I don't think there will ever be a time where 3D isn't a novelty.
