One of my personal favorite observations was the impact of Shoemaker-Levy 9 in 1994. For the first time we had a front row seat to the destructive power of a comet impact, and the telescopes to watch it happen in real time.

The Hubble site also lets you grab the raw images and use them as you see fit. Some of the guys in the club use them to sharpen their image processing skills.
