Medium may be up your alley. It's focus is much more minimalistic than the other platforms you mentioned, and it caters pretty much exclusively to text. When it first came out, the design was so different it put me off a bit, but now I'm considering using it for a personal blog, without any financial aims. But, like btcprox mentioned, unless you want a blog to help get your work out there or to solve other people's problems, a physical journal is pretty much exactly what you seem to be after.
