I used to sell food to restaurants in the U.S. The cheap Chinese restaurants were notoriously disgusting in regards to how they handled their kitchens and their meat.
I once walked in to a Chinese restaurant in Ypsilanti MI and saw forty pounds of chicken thigh defrosting on the floor, out of its box and plastic bag. Just there, next to the drain with flies circling it.
