If you did this veg with some vegetable stock (make your own!) and chopped up some of that applewood field roast sausage in it... mm yeah
It would definitely be good with home made veg. stock, but this is already fairly labor intensive. But yes, this soup is very adaptable in terms of adding stuff to it and playing with it. If you add less liquid, it makes a nice pasta or pizza sauce too.
