The research into dietary fat is a curious intersection of politics, profit, government and science. Studies have shown that if all saturated fats were eliminated from diet, a healthy non-smoker could expect between 3 days and 3 months longer life.[1] There are many other dietary factors, such as the consumption of green vegetables and fiber that have a far greater magnitude of impact on life span and health. Americans seem to have latched onto fat as being some sort of puritan evil in the diet. If you don't eat one thing, you'll eat another--so now diets are laden with carbs. What effect is that having? We live in the omnivore's dilemma.[2] In short, the last 50 years of messaging on fat in diet are proving to be based on faulty science.[3]
