Christmas Eve shift done and now I get Christmas off work ! I'll hopefully videocall my family after enjoying some Reese peices pancakes and start cooking some salt beef. I'm not doing the whole jiggs dinner but so many people here didn't know what salt beef was that I had to make some to share.

It is so not corned beef, if you look up jiggs dinner pretty much every recipe is the same. I'm not sure how easy it would be to find the tubs of salt beef in America though, even in Canada most grocery stores only have like 2 at a time mainly around the holidays. Edit: after 3 hours of simmering I was successful ! I didn't let it soak overnight so it's a tad more salty than my childhood but such is life really.
