We made salmon tonight. Wild caught sockeye salmon was on sale last week. We made a rub with brown sugar, lemon zest, ginger, salt, and pepper, and then let the salmon sit with the rub for about and hour. And we tossed potatoes and carrots with salt, pepper and rosemary. The potatoes and carrots roasted for ~30 minutes or so. Then took them out and put the salmon under to broiler for a few minutes. It was supposed to broil for 6 to 10 minutes, but the juice on the pan started smoking badly after about 3. So we switched back to baking for the last few minutes.

We made an oil, rosemary, garlic, and black pepper mix and covered the potatoes and onions in that first. We roasted those for a bit, then added the pork loin, and roasted that a bit longer. Finally, we added the asparagus and peppers and roasted it a bit longer and all was good. I can't wait to see your salmon. As far as fish is concerned, it's hands down hard to top.
