I don't know why I haven't tried this yet, most of my attempts at making pancakes with GF flour suck (crepes work very well though in case anyone would like to know). Now that it has the hubski stamp of approval I'll have to give it a try.

My favourite recipe book is Gluten Free Artisan Bread in 5 Minutes a Day. They have an awesome recipe for pletzel in there as well as a lot of recipes I haven't tired yet but I'm excited none the less.

Pletzel, it's a Jewish flatbread with kind of a sweetness to the dough. Mine had onions and poppyseed on top which is the normal topping although I guess some people complicate it and it was delicious. I made pretzels too which were pretty bomb.

Let me see if I can dig out a paleo key lime pie recipe I made a friend for her birthday.

It's one of those things that takes far more effort than usual and I still can't be sure it tasted so good because it did or because we didn't believe it could.

There's a brand of flour I use called cup4cup that makes brilliant pancakes. It's expensive, but if you can get it in the great white north, them definitely do. Best gf flour I've ever tried, and I've tried a lot, because my wife has celiac.

Ah-ha, hence your GF flour suggestion for the fried chicken! A recipe I am absolutely going to keep (for when we have time). I've wanted to make her breakfast for two weeks now and we're only just getting to it, so you can see there's a backlog.

GF pancakes are mostly straight forward, but maybe like 1% tricky. I usually use the same flour:milk ratio that I would for non-GF pancakes, but then I cut with a little bit of water. The GF flour gets a little thick and gloppy after a minute or so in liquid. It's best to add a little bit of water at a time until it loosens up again. Doesn't take much. If you're not used to the GF cooking thing, ask anything. I cook a lot, and it's basically been 100% GF for the last couple years. I'm no expert, but I've learned a couple things along the way.

I'll have to check it out, I currently use an all purpose mix that I make myself which works for most things but not fluffy pancakes. Thanks for the recommendation !
