Most linguists agree that the Sapir-Worf Hypothesis is either untestable or obviously false. We're just looking to allow logic to be easier to express.

I agree with false but it seems embedded in the question.

Couldn't one just choose a number of lexical gaps and assign them to the categories?

or go with 'likes men' 'likes women' 'likes men and women'?

That has been suggested, but it opens a can of worms.
