The meatloaf was good. It was off a recipe that the wife found on the internet. It consisted of ground beef (duh), taco seasoning, sour cream, black pepper, and crushed tortilla chips. It was baked for about an hour before we pulled it out and added some cheese on top and sent back in for another five minutes so the cheese could melt. The tortilla chips ended up getting absorbed into the meatloaf and lost their crunchiness, so we had extra on the side for when we wanted a bit more "taco" in our bites of meatloaf. Sadly we forgot the chopped onions and jalapenos that I originally envisioned, but I'm not going to make that mistake again. I think they would have taken it from "pretty good" to "pretty fucking delicious" real quick.
The corn cob is covered in a sauce that consisted of sour cream, mayonnaise, cilantro, garlic powder, and chili powder with a lime wedge on the side for added flavoring.
All in all, it was pretty good and I look forward to making it again.
