That looks amazing. How did you cook the vegetables? Roasted? We're making salmon tonight. I'll try to take pictures and add them later.

We made an oil, rosemary, garlic, and black pepper mix and covered the potatoes and onions in that first. We roasted those for a bit, then added the pork loin, and roasted that a bit longer. Finally, we added the asparagus and peppers and roasted it a bit longer and all was good. I can't wait to see your salmon. As far as fish is concerned, it's hands down hard to top.
