Going to the Eastern Market in Detroit tomorrow morning/afternoon for Saturday evening's dinner and I'm taking suggestions. Kind of piggybacking off of TNG's #grubski post here, I'm looking for vegetarian recipes! I'm not a vegetarian/vegan, but I do believe that abstaining from meat is not a bad thing, and that I can grow more as a cook by going meatless.

I'm currently thinking of a vegetarian lasagna (Keeping the cheese, I'm not crazy) or maybe a mushroom ravioli.

Thoughts?
