Welcome to Washington! I made a similar trip from the East Coast a few years ago when I moved out here and saw some of the same things--one of the best trips of my life by far. I missed the Dakotas, and didn't really think I was missing anything until I saw your pictures here. Tacoma is a great spot--not too many cities in the country where you're an hour away from two of the country's finest national parks!
